Self Rising Flour Tip

If you find yourself in need of self rising flour and you don't have any here's what you can do:

Mix together 1 C all purpose flour, 1 1/2 tsp baking powder
and 1/2 tsp salt.

This will give you 1 C self rising flour.

I don't usually have self rising flour in my pantry since I don't use it that often. This is a good substitute for those random recipes that call for it.

Blueberry Muffins

My mom made these all the time while I was growing up. They were always perfect and yummy!! Now I make them for my family and they are a HUGE hit with them. Always makes me think of my mom even though she's on the other side of the country!

Blueberry Muffins
1 1/2 C self rising flour
1/2 C sugar
1/4 C margarine (softened)
1 egg broken into measuring cup and mixed with enough milk to make 1 C
1C fresh or frozen blueberries (barely thawed if frozen)

Preheat oven to 400 degrees.

In medium bowl, combine flour and sugar. Cut in margarine until mixture resembles coarse crumbs. Add egg-milk mixture and stir (DO NOT BEAT) until all is moist. Fold in blueberries. Fill 12 greased muffin tins about 2/3 full (i used some silicone heart shaped baking cups, but use whatever you have). Bake in oven for 20-25 minutes. Remove to tacks to cool slightly. Serve warm.

150 calories per muffin (just in case you were curious)


Quesadilla Chicken Burgers

To say i've been out of it lately would be an understatement. I just haven't felt like doing much when it comes to food blogging. I have been cooking and taking pictures, but that's about it. So i'm going to try to make up for it!!

For my daughter's birthday we went out to dinner. I got a quesadilla burger and it was really good. So I came home and thought about how I could do it. This is what I came up with (it's a little different from I what I had at the restaurant because of what I had on hand. Otherwise it was really good!!!

Quesadilla Chicken Burgers

1 pkg chicken burgers (pre made)- can use hamburger but like I said this is what I already had
corn tortillas (about 12 depending on how many your family will eat)
2C shredded sharp cheddar
favorite salsa

Cook chicken patties per package directions.

For assembly:
place tortilla on pan, top with a little bit of cheese, chicken patty, salsa, cilantro and more cheese. Top with another tortilla. Continue until all are made.

Bake in oven until cheese is gooey and melted and tortillas are crisp.
Serve with favorite side.

These weren't quite restaurant quality, but they were good.

Sausage gravy and biscuits

Breakfast for dinner again last night, but not the same ole' pancakes and eggs. Oh don't get me wrong...eggs were still part of it, but I decided to break out a Paula Deen favorite and made biscuits and gravy. Hope you enjoy!!!!

Sausage Gravy
1 12 ounce tube sausage
2 tbsp all purpose flour
2 C milk
freshly ground black pepper
favorite biscuits (you can find a really good recipe here)

In a large skillet brown sausage. Once browned, remove with a slotted spoon and keep drippings in the pan.
Add flour and whisk for about 1 minute. While whisking add milk and bring gravy to a boil. Lower the heat and simmer gently for 2 minutes. Add thes ausage back to the pan along with the pepper.
Split biscuits in half and divide them among the plates. Top each biscuit with gravy and serve immediately.

This was pretty good. I think I added too much pepper to mine and I recommend NOT using garlic flavored biscuits. They turned out too salty for my taste, but hey if you like it then go for it! No rules when it comes to the biscuits in this dish.

I served this with cheesy scrambled eggs.

Easy Thai Food

I love Asian inspired food. Foods with peanut sauces are at the top of my list. Really yummy!!!!
Here's one that I'll make again and again!! My family wasn't as excited about this as I was, 3 out of 5 liked it, I could've eaten the whole thing! Seriously, it was that good!!!

Easy Thai Chicken Calzones
2 C finely shredded chicken (I used 3 chicken breasts and broiled them in a little salt, pepper, garlic powder and curry powder-not only will it flavor the chicken but make a rad broth for later use!)
1 1/2C shredded cabbage
1/3 C peanut sauce (recipe to follow)
2 green onions, thinly sliced
handful of cilantro, chopped (I didn't measure, just grabbed and chopped)
1 can large biscuits (grands) 8 biscuits in a can

Heat oven to 375 degrees. In meantime mix all ingredients together.

Roll out biscuits to a large round. Put generous spoonful of filling on half and and fold dough over filing.

Press edges to seal. Place on cookie sheet.

Bake 15-20 minutes (I baked mine for 17 and they were perfect). Immediately remove calzones from cookie sheet. Serve warm with any extra peanut sauce for dipping.

Peanut Sauce
1/2 C peanut butter
2 tbsp soy sauce
1 teaspoon white sugar
2 good dashes curry powder (more or less depending on your taste).
1 tsp garlic powder
1/2 C water

In a small bowl mix all ingredients except water. Gradually add water until it becomes a smooth consistency.

*I ate the leftovers for lunch today and they were just as good as they were last night!!! So yummy!!!!! 8-11-09)

Easy Cheese Quesadillas and Black Beans

I love Mexican food. One of my favorite places to eat is Cafe Rio. Unfortunately we don't have one where we live and i'm going through some serious withdraws because of it. Luckily I was watching a rerun of Semi Homemade Cooking on Food Network (must say it's one of my favorite channels) and she made a black bean side dish that I just HAD to try. I could have eaten the entire pot I'm not kidding. It was that good and quite possibly could give the Cafe Rio folks a run for their money (maybe). I tweaked it a little bit and here you go!

Easy Quessadillas
flour tortillas
quessadilla cheese blend
sharp shredded cheddar

place cheese on tortillas and fold in half. Use as much cheese as you like. I just grabbed and put on the tortillas. We like things cheesy around here.
once folded place on baking sheet and bake in a 375 degree oven for 10 minutes or until cheesy is melted.

The Best Black Beans You'll EVER Eat
1 -15 ounce can, black beans
1-10 ounce diced tomatoes (I used the fire roasted ones)
1 tbsp lime juice
1/2 C finely chopped onion (I used 1/2 an onion and went to town on chopping it)
1/4C finely chopped cilantro

add all ingredients to medium saucepan. stir to combine. bring to a boil and then reduce heat to low and cook for about 12 minutes. serve with quessadillas and chips.

this would also make a great room temperature dip. that's how we ate it. seriously---it was DIVINE!!!

Shredded BBQ Chicken Sandwiches in the Crock Pot

So Happy Blogiversary to me.......only several days late!! Guess I wasn't paying attention. Oh well. Here's something yummy to tempt you and make your mouth water all day while it cooks. This originally is done with a pork roast but whole chickens were on sale the day I went to the store so we used that instead. It turned out perfectly.

Shredded BBQ Chicken Sandwiches in the Crock Pot
1-3lb whole chicken
2 tbsp honey
onion powder
garlic powder
1/4 C brown sugar
1 bottle honey brown sugar bbq sauce

place chicken in chicken in crock pot. pat dry and sprinkle spices on as liberally as you wish. add brown sugar and honey. turn pot to high and cook for about 5 hours.

once cooked pull chicken away from bones and place in separate bowl. shredded with 2 forks and add bbq sauce as thickly as you like.

eat on hamburger buns (or sliced bread) and top with cole slaw (recipe found here). we ate this with corn on the cob.

this was so good. made me think of being back home in NC with my family who are known for their yummy bbq's. ok, now i'm homesick, think i'll go find a hole and cry for a bit.
