Easy Biscuits

This is Paula Deen's recipe. They turned out really flaky and yummy, however weren't as tall as the ones pictures with the recipe. I mixed everything in my food processor. Next time I'll do the well with the milk, but it worked great for cutting in the butter with the flour mixture.

  • 2 cups all-purpose flour
  • 1 teaspoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 8 tablespoons butter, cubed
  • 3/4 cup milk


In a large bowl combine flour, sugar, baking powder and salt together. Cut butter into mixture until it begins to look like cornmeal.

Make a well with flour mixture and slowly add milk into the middle. Knead dough with your fingers and add milk when necessary. Roll out dough onto a lightly floured surface and roll out to desired thickness. Cut with small biscuit cutter.

Butter bottom of skillet and place biscuits in pan. Bake for 12 minutes or until golden brown.

Happy Memorial Day

Hope everyone had a wonderful Memorial Day. Ours was delightful. Our church had a BBQ with lots of water games for the kiddos and fun and food for all. It was a nice way to stop and remember the reason we celebrate. My husband is a war veteran, my father served in the military and both my grandfathers served and one of them was a POW, so this day means so much to me. So without getting's my contribution to today's BBQ: very easy spinach salad. No picture needed......

Spinach Salad
1 bag prewashed spinach
1/2 red onion thinly sliced
1/2 pound block cheese, sliced into small chunks
1 large tomato, chopped
1/2 pound bacon, cooked and crumbled
1 bottle roasted red pepper vinaigrette

Mix and toss and serve.

This went fast and it was really yummy.

Beef Noodle Dinner

So I completely forgot to grab my camera and take a picture. Yesterday was one of THOSE days you know? My allergies had gone berserk and I wasn't about to do anymore than necessary! So here's what I made for dinner last night. It was really good and made a bunch. Sorry again for lack of photo!!

Beef Noodle Dinner
1 pound ground beef
1/2 C dehydrated onions, reconstituted
1/2 C dehydrated carrots, reconstituted
salt and pepper
3 garlic cloves, chopped finely
1 can (19 ounces) ready to use chunky veggie soup
4 ounces spaghetti, cooked and drained
1 1/2C shredded cheddar cheese

While spaghetti is cooking, brown hamburger. Add dash of salt and pepper to meat for seasoning. Drain fat and add carrots, onions, and garlic. Heat through. Add soup mixture to pan. Transfer to greased 2 qt. baking dish. Top with cooked spaghetti and then the cheese.
Bake at 350 for 15-20 minutes. I cooked mine for 18 minutes.

It was really good. Very easy to make and perfect for the hectic nights!!!

buttermilk tip

if you are out of buttermilk and you need it for a recipe here you go:

You can add 1 tablespoon vinegar or lemon juice to 1 cup milk. Stir and let stand for 5 minutes. Or you can use plain yogurt instead of buttermilk.

I don't always have buttermilk on hand and it's nice if I want to make some biscuits that I can use this to supplement it!

Now here's something that would be perfect ANYTIME!!!!
I treated myself to a waffle maker about a month ago.

And not a week has gone by that we haven't used it. Today was no different. Normally I've been using a biscuit mix to make them, but today tried a from scratch recipe. They were good, but I think next time i'll add some cinnamon or some other flavor's to it. I found the original recipe on ALLRECIPES.COM

Best Waffles
2 1/2 C all purpose flour
1/2 C cornstarch
1 tbsp baking powder
1 tsp salt
3 eggs, seperated
2 1/2 C milk
2 tsp vanilla
3 tbsp veg. oil
2 tbsp sugar

Preheat waffle iron.
In a large bowl mix together dry ingredients.
In a separate bowl mix together egg yolks, milk, vanilla, and veg. oil. Blend into flour mixture to form batter.
In a medium bowl, whip egg whites with sugar until soft peaks form. Fold into the batter.
Spray waffle iron with Pam or lightly brush with oil. Ladle batter in and cook until golden brown.

These were really good!! Perfect for just about anytime you have the craving!! You know you are on to something when the kiddies prefer these to mac n cheese for lunch!!

Grilled Corn

We've been using our grill like crazy lately. Anything that we can think of to grill we are throwing it on there. Last night we even grilled up some bread to go with the steaks my husband grilled for Mother's Day (I hope each of my mom reader's out there had a great day!!). So this was no exception. Saturday night the grocery store had ears of corn for 5/$1. I couldn't pass it up and decided to grab 5 ears. Just enough to feed our family. I've never grilled corn before so I really wanted to try it. Perfect with the burgers that would be thrown on it as well. So I found this recipe and tweaked it for our family and Viola! Yummy corn off the grill!! Enjoy!!!

Grilled Corn
1 ear per member of your family (or more if you like them)
tbsp butter per ear
salt & pepper

peel the ears down to about 1 inch from bottom. Remove all the silk. Replace the leaves.
Place in tub of water and make sure they soak for about 20 minutes. This will keep them from burning up.
Once they have soaked for 20 min, open leaves and add butter, salt and pepper.

Place on hot grill for about 20-25 minutes. Turn occasionally so they don't get too done on one side.

Eat and enjoy with favorite grilled dish!

These had a great smoky flavor. I loved it! May have to grill my corn more often! Even my 2 year old who isn't that fond of corn on the cob ate it like it was going out of style!! I call that....a success!!

BBQ Chicken Pizza

Who doesn't love a pizza? I don't really know anyone who doesn't. Especially the folks in my house! It's our favorite night of the week. So here's another one to add to the pizza arsenal!!!
BBQ Chicken Pizza
4 chicken thighs, cut up
1 bell pepper, chopped
1/2 bottle favorite BBQ sauce (I used cattleman's original flavor)
2C cheddar. Monterrey cheddar blend, shredded cheese
1C dehydrated onions, reconstituted (or 1 whole onion, chopped)
1 pre-made pizza crust (or use your favorite recipe for one - I used trader Joe's pre-made whole wheat pizza crust)

Preheat oven to 400 degrees.
Cook chicken until no longer pink. Add bell pepper and cook until tender. Roll out dough and place in large pizza pan or on a pizza stone. Top with BBQ sauce.
Then top with onions, chicken mixture and cheese (and anything else you want on top of it). Bake in oven for about 30-45 minutes until crust is done in the middle and not too browned on edges and cheese is super gooey.

This was a HIT! I mean really??? It was pizza so of course everyone dove right into it! As they say on YO GABBA GABBA- "There's a party in my tummy-oh yeah, oh yeah!"

Dinner from way back in the brain...

The other night I was trying to figure out what to do with dinner. I knew what the menu suggested for the evening and what we had on hand, but unfortunately, no one wanted any of it. So I had to get creative. This is was I came up with.

Cheeseburger Roasted Potatoes

4-5 large potatoes, cubed and roasted at 400degrees for 45 minutes
2 ounces velveeta cheese
1 pound ground beef
2C shredded lettuce
2 tomatoes, diced
2 tbsp ground mustard
1/4 C ketchup
sliced pickles (optional)

While potatoes are roasting, brown ground beef and drain. Mix in mustard and ketchup along with the velveeta cheese, letting it melt.

Once potatoes and beef mixture are ready, place potatoes on plate and top with lettuce, beef mixture, tomatoes and pickles.

This was an interesting try out. I'm not sure we'll make it very often but it was like eating hamburgers and fries all at once-without the excess bread. It was interesting and everyone ate it, the husband even went back for seconds.......if you try this let me know what you think?

Bruschetta Chicken Bake

I guess I'm a little behind in posts. I found these pictures lurking in my camera, thinking I had already posted about them. Shame on me I know!!!

This is one of our family's favorites. One of mine and the hubbie's favorite appetizer's to get is bruschetta. I could eat an entire loaf of it. The tomatoey-cheesy goodness of it just makes me want to scream!!! This dish is similar to that. It's really good and depending on how much cheese you add, it's ooey and gooey. Perfection!!! Really good for potluck at church or taking to a friend in need. Hope you enjoy!!

Bruschetta Chicken Bake
1 box stove top chicken flavored stuffing
4 chicken thighs chopped
2C mozzerrella cheese
1 can diced tomatoes, italian style, drained
italian seasoning, as much as you like

Preheat oven to 350 degrees.
Cook chicken in italian seasoning until no longer pink.
While chicken is cooking, mix stuffing according to package directions.
Once cooked place chicken and tomatoes in greased 8 1/2 X 11 dish. Top with cheese and then stuffing.
Bake in oven for 3o minutes or until cheese is ooey and melted.
Serve with favorite crusty bread and salad!!
