Cookie Pizza

Here's a GREAT way to get rid of all that left over halloween candy. Of course it didn't even put a dent in what we had.... oh well......we just may have to do this again!

It's really easy to make, here's how:


Cookie Pizza
1 tube refrigerated cookie dough (your choice)
caramel ice cream topping (if it's been in teh fridge, put some in a bowl and heat in microwave at 30 sec intervals)
random chocolate candies of your choice
marshmallows

roll out cookie to fit a pizza stone or shape of desire. Ours turned into a blob. Bake for about 10 min until almost done. top with caramel sauce and candies of choice. bake another 10 min until chocolate just starts to melt. Add marshmallows and bake until they melt. let cool and cut accordingly. this NEEDS a tall glass of ice cold milk. I won't lie, our teeth hurt when we were done. But it was ssssooooooo worth it!!!

another yummy pizza recipe

Here's another super easy pizza crust recipe. I found it here! Michelle has some fabulous recipes-check her out!

Enjoy!!

2 3/4 - 3 1/4 cups all-purpose flour
1 tbsp active dry yeast (or 1 package)
1 cup warm water
2 tbsp oil (olive oil is great)

Preheat oven to 425.

In a large mixing bowl combine 1 1/4 cups of the flour, the yeast, and 1/4 tsp salt. Add warm water and oil. Beat with an electric mixer on low speed for 30 seconds, scraping bowl. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can.

Turn dough out onto a lightly floured surface, knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic. Place in lightly oiled bowl, cover, and set in warm place. (I like to set the bowl in the sink with warm water to help it rise faster) Let rise until double.

Prep your pan by lightly sprinkling it with corn meal. (like you use for cornbread) Roll or pat your dough to the desired shape and size, and lightly fold into quarters, set in pan, and gently unfold. Pour about 1 tbsp oil (again, I like olive oil), use hands to spread around on dough. Sprinkle with garlic powder, onion powder or onion salt, Italian seasoning, and Parmesan cheese.

Place pizza dough in oven. Bake for about 10 minutes. Remove from oven and top as desired with sauce, cheese, etc. Return to oven until cheese is melted and bubbly.

And here's how we topped it:

1/2 jar roasted red pepper alfredo sauce
1C re-hydrated onions
1C fresh baby spinach, chopped
3 chicken thighs, cooked and chopped
2C mozzarella cheese

slather the sauce on the pre-bakes crust
top with spinach, onions and chicken. top with cheese, bake an additional 10 minutes until cheese is melted.

This was heaven. I loved it! Must use this crust recipe more often!

BBQ Chicken Pizza

Who doesn't love a pizza? I don't really know anyone who doesn't. Especially the folks in my house! It's our favorite night of the week. So here's another one to add to the pizza arsenal!!!
BBQ Chicken Pizza
4 chicken thighs, cut up
1 bell pepper, chopped
1/2 bottle favorite BBQ sauce (I used cattleman's original flavor)
2C cheddar. Monterrey cheddar blend, shredded cheese
1C dehydrated onions, reconstituted (or 1 whole onion, chopped)
1 pre-made pizza crust (or use your favorite recipe for one - I used trader Joe's pre-made whole wheat pizza crust)

Preheat oven to 400 degrees.
Cook chicken until no longer pink. Add bell pepper and cook until tender. Roll out dough and place in large pizza pan or on a pizza stone. Top with BBQ sauce.
Then top with onions, chicken mixture and cheese (and anything else you want on top of it). Bake in oven for about 30-45 minutes until crust is done in the middle and not too browned on edges and cheese is super gooey.

This was a HIT! I mean really??? It was pizza so of course everyone dove right into it! As they say on YO GABBA GABBA- "There's a party in my tummy-oh yeah, oh yeah!"

Baked Hawaiian Calzone

My favorite pizza is the Hawaiian pizza. I love the contrast of the pineapple with the ham and sauce. When I was little I never thought it sounded good, those things all together just didn't sound right, but once I tried it I fell in love with it. So here is a calzone that should be tempting to you if you like that kind of pizza. Super easy to do also!! And you could susbstitue just about anything on the inside. Make it your own!

Baked Hawaiian Calzone
1 bag pre-made pizza dough (I used the whole wheat version from Trader Joe's)-it's enough to make one pizza
1 can pineapple chunks
1 package Canadian bacon for pizza (small circles)
favorite spaghetti sauce or marinara sauce
2 C mozzarella cheese


Preheat oven to 350 degrees.

Roll out dough to a good size rectangle. Place topping on, start with bacon, then pineapple, then about 1 C worth of sauce and top with cheese. Roll up making sure that the ends are sealed up and place seam side down. Cut slits in top to vent or it might explode all over the pan. :O)

Bake for 30 minutes or until dough is nice and brown. You can do an egg wash to ensure it gets brown, but I chose not to do that since it was whole wheat dough.

Slice and serve with extra spaghetti/marinara sauce.

This was perfect! The kids all dove right into it and it was just enough ooey gooey goodness that made everyone's night!I probably could have eaten the whole thing.

Upside-down Pizza Pulls

Happy Friday!!
It's football night at our house. BYU vs. UTAH St. It's a big night. So we decided instead of our regular pizza we'd try something new. I found this recipe on the kraftfoods.com website. It looked really easy and super yummy. Here's what I did:

Upside-downPizza Pulls
1 refrigerated pizza dough
1/2 pound sausage, cooked and crumbled
1/2 large onion, chopped
2 large tomatoes, chopped
shredded cheddar cheese
shredded mozzarella cheese
1C (give or take) italian dressing



Preheat oven to 400 degrees.
Spray a 9X13 pan with cooking spray.
Place veggies and cheese in bowl and coat evenly with dressing. Add more or less depending on how you like it. Place mixture on bottom of baking dish. Cover with the cheese, again as little or as much as you like (we like a lot so ours is extra cheesy).
At this point I added a little more dressing to the top of the cheese.
Open dough and spread out on counter. Cut into squares. Place squares on top of cheese until covered. Place in oven for 30 minutes. Once cooked, cool 10 minutes and invert onto platter or pan of choice.



I had leftover dough so I took the squares and added some sausage to each one and scrunched them into balls. I cooked them at 400 degrees for about 10 minutes. I like to call them little sausage poppers. These are great anytime.

Sunken Pizza

Friday night is pizza night at our house. It's usually followed up by a movie and a sleepover in the living room. So tonight while trying to figure out what type of pizza I wanted to do I decided that I didn't want to do my all day pizza crust. So I went searching for an easier one. I found one that is so easy!! And of course because it's me, I tweaked it a bit.





2 C All purpose flour
1 1/3 C milk
1 tbsp pizza seasoning (you can find this in the spice aisle. Otherwise use basil and oregano)
4 eggs, slightly beaten

Preheat oven to 400 degrees.

Mix all ingredients and pour into a well greased cookie sheet.
Top with your favorite pizza toppings (tonight it was hamburger and onions)
Bake for 20-22 minutes until crust begins to brown on edges.
Pull out and top with pizza sauce and cheeses of choice.
Bake another 10 minutes until cheese is nice and ooey gooey.

This was a really fun way to enjoy pizza night. Even the picky eaters wolfed it down.
