Chicken Tetrazzini

I saw this on a website and thought it looked really good. I put my own little spin on it and it was super yum! Turned out really creamy and just perfect! Think I might add this one to my list of faves!! Hope you enjoy!

Chicken Tetrazzini
1 pound spaghetti noodles
1 pound chicken thighs, cut into bite size pieces
1C frozen corn
1/2 dehydrated carrots, rehydrated (or 1 C sliced carrots)
1 can cream of (whatever you like) soup
2 tbsp butter
1C milk

Boil water and cook pasta according to package directions.

Cook chicken in butter until cooked through. Season liberally-it's the only chance you'll get to season the chicken. I used KICKEN CHICKEN seasoning from Weber. But you can use whatever spice blend you like best. Once chicken is cooked remove it from pan onto a plate and set aside. Add soup and milk to pan and heat through. Add corn, carrots and chicken and cook until warm and bubbly. Let stand for 10 minutes.
Drain pasta and top with sauce. Serve with another veggie and viola! dinner is served!!

Warm Zucchini and Pasta Salad

This is really good. I made this for a pot luck dinner at a friends home. I came home with very little of it left!


Warm Zucchini and Pasta Salad
4-5 small to medium zucchini's sliced 1/2 in thick
2 large yellow bell peppers, chopped in large pieces (but keep them bite size)
1/2 red onion, chopped
8oz small shell pasta cooked according to package directions and drained
1 bottle cheesey vinagrette (or italian) salad dressing-pick your favorite
1/2 cup shredded sharp cheddar cheese
1 large roma tomato, sliced

cook the peppers and zucchini in pot with a little bit of olive oil. cook until tender but with a slight crunch, not soggy.

let cool slightly and add pasta and onion.
add dressing (you won't use the whole bottle unless you like it soupy-just use as much as you desire) and let sit until ready to eat. just before serving add cheese and top with tomatoes.

you do not need to refrigerate until after it's been served. this is meant to be warm, but not hot.

Ham and Cheese Braid

I made this for dinner the other night. Had a craving for pizza but wanted something a little different and this fit the bill perfectly.

Ham and Cheese Braid
1 loaf premade bread or pizza dough (I used this recipe)
1 container veggie cream cheese
1 - 16oz pkg deli ham (could use turkey)
1 1/2 C shredded sharp cheddar cheese

Prepare dough for pizza.
Preheat oven to 375 degrees.
Once rolled out to desired size top with cream cheese. Add as little or as much as you want. I added extra because it's just that good.
Top wtih ham slices. again add as little or as much as you want.

Top wtih cheese.

At this point take a pizza cutter and begin cutting slits on each side of loaf. this will help give braided affect.
top with a bit more cheese.

Place braid on foil lined baking sheet and bake in oven for 25-30 minutes or until golden brown and cheese is melted.
(ignore the fact that mine didn't get too brown on top)

Eat with favorite side and it's really good dipped in ranch dressing (my husband did this for he likes most things with a side of ranch)

Strawberry Oat breakfast bars

We made these for breakfast this morning. Very quick to make and worth every bite!!

Strawberry Oat Breakfast Bars

1 1/2 cups quick cooking oats
1/2 cup unbleached all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup brown sugar
1/4 cup margarine, softened
1 egg
1C fresh or frozen strawberries (or berry of your choice)

Preheat oven to 350 degrees F. Lightly grease 9x9 inch baking pan. In a large bowl, stir together oats, flour, baking powder, cinnamon and salt. In a separate bowl, cream together brown sugar and margarine. Beat in egg. Stir mixtures together just until blended. Pour batter into prepared pan.

Bake in preheated oven for 30 minutes, until a toothpick inserted into center of pan comes out clean.



These are best served with milk as mine turned out a little dry. But they have a very yummy taste and are quite filling!! You could also omit the berries all together if you wanted. My husband suggested powdered sugar on top after wards. Yummy either way!!!

Octopus Dogs with Mac n Cheese

I made these for our lunch today. Something to make everyone happy and a little out of the ordinary. These were a hit.

Basically take your favorite hot dog and cut it up to the middle to make the 8 legs. Cook in hot water according to package directions. The hot water causes the "legs" to curl. FUN!!!
Place on top of mac n cheese mound and enjoy!!!!

Super easy and super fun!!

Grilled Nachos

These are supposed to be grilled but I didn't feel like taking ours out and it was threatening rain so I did these in the oven. They'd probably be better on the grill, but they weren't bad.

Grilled Nachos
1 bag tortilla chips
1 can black beans, drained
1 4oz can green chilies
1/2 red onion, diced

1 envelope taco seasoning
2C shredded cheddar cheese (or you could use a mixture of jack and cheddar)


In a small bowl, mix beans and green chilies with taco seasoning and onions. Set aside. In a grill pan place chips on bottom. Top with bean mixture and cheese. grill until cheese is bubbly and gooey. (Or put in oven safe dish and bake at 400 until cheese is melted). Top with chopped parsley. We also had ranch dip for these.

Surprise inside mini cupcakes

I got a snazzy mini cupcake pan for my birthday. This is the first time really using it. These little gems are bite size and kid size! Perfect for parties or bbq's. Hope you enjoy!!

Surprise inside Mini cupcakes
1 box cupcake mix
ingredients called for to make cupcakes
36 mini marshmallows

frosting and sprinkles of choice

make cupcakes according to package directions. place slightly under 1 tbsp batter in muffin pan. top with marshmallow. bake for 15 minutes in 350 degree oven.

Let cool-if you find that the marshmallows completely dissolve in the oven place a new one in the hole made by the one cooked. extra yumminess!!!

frost and sprinkle to your liking!

Corn Tortilla Taquitos and Spanish Rice

Taquitos
12 corn tortillas
2C shredded chicken
2C refried beans (I used food storage but you can subsitute 1 can)
1 4oz can green chilies
1 1/2 C shredded cheddar cheese
veg oil for frying

Heat beans, chicken and chilies through. Add cheese and allow to melt. Heat oil in med skillet. Add mixture to tortilla and roll up placing seam side down in oil. Fry for about 3 minutes on each side until golden brown. No need for toothpicks as they will stay closed once fried. Serve with salsa, sour cream, ranch, extra cheese, whatever you prefer!


Spanish Rice
2 bags boil in bag brown rice
1 can white sweet corn
1C rehydrated food storage carrots
1C salsa

Cook rice according to package directions. Drain all water. Add remaining ingredients and warm through. Serve with taquitos!

Everyone's Favorite Rice Krispie Treats

Rice Krispie Treats

4 tbsp butter
4C marshmellows
8C rice krispies
handful m&m's, cut up oreos, whatever you'd like to add

melt butter and marshmellows. add rice krispies, stir to coat. add candies or extras if desired. cool and cut into desired shapes.

Blonde Brownies

Blonde Brownies
1/4 C butter, melted
1C packed brown sugar
1 egg
1 tsp vanilla
3/4 C all purpose flour
1 tsp baking powder
1/4 tsp salt

In a mixing bowl beat the butter, sugar, egg, and vanilla. Combine the flour, baking powder and salt: gradually adding to sugar mixture and mix well.

Spread in a greased 8 in baking dish. Bake at 350 for 15-20 minutes or until toothpick inserted comes out clean. Cool in a pan on a wire rack. Cut into squares.
