Layered Bruschetta Dip

For father's day my husband always gets the same thing. Pork roast and saurkraut. This year I had a head of napa cabbage in my fridge and used that instead of the saurkraut (glad I did because now the rest of us got to eat some of the roast too, otherwise the kids and i would have had something different). NOT a saurkraut fan, but I know my husband loves it, so he gets it on Father's day and his birthday. I also wanted to make an appetizer for him. He loves chips/crackers and dips and I found this in one of my recipe books and really wanted to try it. I don't think I've ever tried it before. It was a HUGE hit. He ate almost the whole thing in one sitting. Guess i'll be making this more often!!

Layered Bruschetta Dip
1 pkg cream cheese, softened
1 bunch green onions, sliced
1 tomato, diced
3tbsp garlic powder
dash paprika
1tbsp dried Italian seasoning
1/2C shredded sharp cheddar cheese
parsley, chopped

Mix garlic and cream cheese. Place in bottom of small dish. Top with paprika.

Then add green onions,


cheese and parsley.

Eat with wheat crackers.

You could add any spices or flavors to the cream cheese that you like to make it more italian. I made this the day before and let it sit and the flavors melded together beautifully. Of course my fridge smelled like it but it was worth it!!! Hope you enjoy it!

Sloppy Joe Mac

I found this recipe on the Kraft Foods website. It looked yummy and so easy. Here it is:

Sloppy Joe Mac
1 lb. ground beef
1 pkg. (7-1/4 oz.) Macaroni & Cheese Dinner
2 cups water
1/2 cup barbecue sauce
1 cup tomato sauce
2 cups shredded lettuce
2 tomatoes, chopped
2 tbsp chopped cilantro (this was my addition to it-gave it a little kick)

BROWN meat in large nonstick skillet on medium-high heat; drain.

ADD Macaroni, water and barbecue sauce; stir. Bring to boil; cover. Simmer on medium heat 8 min, stirring occasionally.

STIR in Cheese Sauce Mix and tomato sauce; cook until heated through, stirring frequently. Top with lettuce and tomatoes.

This was really good and went without any leftovers. We also had cheese toast to go with it. You can never have too much cheese! haha!

Salisbury Steak

I can't believe it's been so long since I've posted anything! HUGE apologies. I've really been baking, just forgetting to take pictures and post anything. I'll do better this month!!!!!!
Here's a fun meal I made for Sunday dinner. It was really good and VERY filling! Even the kids ate it which was HUGE in itself. Enjoy!!

Salisbury Steak
2 lbs ground beef
1 pkg stuffing mix
1 medium onion, chopped finely
2 eggs
2C water, divided
1 tbsp veg oil
1/2 C BBQ sauce (whatever flavor you like the best-I used hickory honey smoke flavor)
1 tsp Worcestershire sauce
1/4 tsp black pepper

Mix meat, stuffing mix, onion, eggs and 1 1/2 C water until well blended. Shape into 8, 5in patties.
Heat oil in large nonstick skillet on medium heat. Add patties. Cook 6 minutes on each side or untilt hey are cooked through and golden brown on each side.
Drain fat.
Combine bbq sauce and remaining 1/2C water, Worcestershire sauce and pepper. Pour evenly over patties, bring to a boil, reduce heat to low and cover. Cook an additional 5 minutes or until sauce has thickened and is heated through.

I did the sauce and then poured it over each steak. There are some in the house that didn't want theirs smothered. Oh well. It was still super delish!!! :O)


The Ultimate Smoothie

This was brought to me by my oldest. He loves smoothies and wanted to make this one. So here goes! Enjoy!!

Berry Smoothie
1 8oz container mixed berry yogurt
1/2C orange juice
1 banana, sliced
1C ice
1 C strawberries

Crush ice in blender. Add rest of ingredients and blend for 30 seconds. Pour into cups or glasses and enjoy!!!

These were explosively popular in our house. Perfect for Saturday morning breakfast!!!

another yummy pizza recipe

Here's another super easy pizza crust recipe. I found it here! Michelle has some fabulous recipes-check her out!


2 3/4 - 3 1/4 cups all-purpose flour
1 tbsp active dry yeast (or 1 package)
1 cup warm water
2 tbsp oil (olive oil is great)

Preheat oven to 425.

In a large mixing bowl combine 1 1/4 cups of the flour, the yeast, and 1/4 tsp salt. Add warm water and oil. Beat with an electric mixer on low speed for 30 seconds, scraping bowl. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can.

Turn dough out onto a lightly floured surface, knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic. Place in lightly oiled bowl, cover, and set in warm place. (I like to set the bowl in the sink with warm water to help it rise faster) Let rise until double.

Prep your pan by lightly sprinkling it with corn meal. (like you use for cornbread) Roll or pat your dough to the desired shape and size, and lightly fold into quarters, set in pan, and gently unfold. Pour about 1 tbsp oil (again, I like olive oil), use hands to spread around on dough. Sprinkle with garlic powder, onion powder or onion salt, Italian seasoning, and Parmesan cheese.

Place pizza dough in oven. Bake for about 10 minutes. Remove from oven and top as desired with sauce, cheese, etc. Return to oven until cheese is melted and bubbly.

And here's how we topped it:

1/2 jar roasted red pepper alfredo sauce
1C re-hydrated onions
1C fresh baby spinach, chopped
3 chicken thighs, cooked and chopped
2C mozzarella cheese

slather the sauce on the pre-bakes crust
top with spinach, onions and chicken. top with cheese, bake an additional 10 minutes until cheese is melted.

This was heaven. I loved it! Must use this crust recipe more often!

We invited some friends over last night for a BBQ. We decided to grill up some ribs that I had gotten a killer deal on. And once I started getting them out of the package, they looked more like steaks than ribs. They were HUGE!!! I definitely got my money's worth out of this meat! Oh the things I'll be able to do with the ribs that are left!!

BBQ Ribs
how every many ribs you need to feed your family (the package I bought was 9lbs worth)
favorite BBQ sauce

boil the ribs for about 20 minutes. top with bbq sauce and grill for about 8 minutes on each side. top with additional sauce as they cook and when you eat them.
These were DELISH!!!!! And did I mention how big they are? I was only able to eat 1, so we have lots of left overs.

I also made a pasta salad. It was really good and made a ton!! Here you go:
Pasta salad
16 oz elbow macaroni
2 C fresh cut up broccoli florets
1 can diced tomatoes, drained
3/4 C dehydrated carrots, reconstituted
2 C fresh baby spinach, cut up
1/2 red onion, diced
2 hard boiled eggs, sliced
1 bottle roasted red pepper and parmesan vinaigrette salad dressing
1/2 C sharp cheddar cheese shredded.

Cook pasta according to package. Blend all ingredients and chill. The longer the better.
